breakfast for dinner: yeasted buttermilk-wheat waffles
The first several weeks after Samuel was born we ate lots and lots of very simple dinners. I have a list of meals that I have typed up for just such occasions. I know I can prepare those meals in very little time and I use the list as a reference so that I don't have to expend any effort in deciding what to make on those nights when I am just too tired to think. Even with the sleep deprivation that comes with a new baby in the house, eating a home-cooked dinner is important to me. It would be easy to rely on fast food or prepared meals (and don't get the wrong idea, there were a few of those types of meals had these past couple of months), but the truth is, I feel better and my husband feels better when we're eating the way we are used to.
You might not think that homemade waffles would constitute an easy dinner, but they really are very simple to prepare and make. Start the batter in the morning, add the rest of ingredients just before dinner, and bake. With the addition of fresh fruit, and some sausage - or better yet, bacon - you've got yourself a decent dinner. And around here, breakfast for dinner is considered super-fun! I think the boys think it's just a little bit naughty, like we're doing something that maybe we aren't supposed to be doing. It makes for one happy meal time.
As a little aside, I live with four boys, and guess what? They all love bacon! Love. Okay, well Sam doesn't love bacon, yet, but I'm sure he will one day.
Yeasted Buttermilk-Wheat Waffles

Ingredients:
2 1/4 teaspoons active dry yeast
1 teaspoon sugar
1/4 cup lukewarm water (between 100 and 110 degrees F)
2 cups lukewarm buttermilk
1/2 teaspoon salt
1 1/2 cups white flour
1 cup wheat flour
2 tablespoons sugar
5 tablespoons melted butter, cooled
2 eggs, beaten
1/2 teaspoon baking soda
1 tsp vanilla extract

just around the corner
I shared these cards yesterday at the Simple Stories blog, but I thought I'd go ahead and share them with you here too. Three cards I made using the Fabulous collection:
The one above is a Mother's Day card, but I think any of these could work for the occasion.
They're all pretty simple, and could be made rather quickly - since it is rather the last minute.
Today is daddy's Friday off, yay! And even though it is Mother's Day weekend, we don't have anything special planned. Sam was kinda fussy this week (switching-up his routine a little, babies like to keep you on your toes), so I'll just be happy if I can catch-up on some chores and cleaning. Seriously! I actually really enjoy some aspects of housekeeping and when I fall behind on them I get a little antsy. What about you? Anything special planned for this weekend?

it's all about the elements
For those who are not familiar with Simple Stories, each collection includes a group of papers called element sheets. These are patterned papers that are designed to be cut apart and used as separate elements on a layout. They come in various sizes such as 4x6, 4x4, 3x4, etc. Element cards can be trimmed and slipped into your divided page protectors, or they can be used as layout backgrounds, page accents, photo mats, journaling cards, mini books and more. Plus, they are double-sided for added versatility.
Last week several members of the design team participated in a challenge to create a project using the element sheets. I created a layout inspired by the 4x6 vertical journaling cards from the Awesome Collection:
Gabe will be turning six next month (six!!) and I decided to make a page about him using the All About Me card. I simply took a snapshot of him and then asked him to answer the questions on the card:
The card does double duty as a title which helped make this layout even easier to put together.

you are so loved
Just a quick post to share with you another layout that I finished last week:
Love this little sweetie-pie.
Right now, I need to catch-up on some laundry. I'm looking forward to the weekend - it will be here before you know it. And I think I'm going to make French toast on Saturday. I've been craving it for weeks now, and the boys can live without their Star Wars pancakes for one weekend. I just need to remember to defrost the challah on Friday night. We'll see if I do. =)

everydaily
That's the theme of this month's gallery at write.click.scrapbook. We are celebrating and documenting the everyday, and just like every month, the gallery is filled with tons of great inspiration.
My gallery contribution for this month is a layout about Nathan:
Nathan is fearless when it comes to some things. Jumping from a ridiculous height and sticking the landing? No problem. Putting on your shoes by yourself... well, for some reason he really didn't want to try to do this without help from mommy or daddy. I think it's because he is a little shy of doing things when he is not guaranteed success. After much coaxing though, last summer he did start attempting to do it himself. Even now, months and months later, he still puts his shoes on the wrong foot, often, but at least now he tries.
Putting your shoes on everyday is a pretty ordinary experience. But when you're little and just learning to do it by yourself for the first time, it can be a big deal. Recording the everyday moments of my family’s life is what truly inspires me in this hobby and it is the topic that makes up the bulk of my pages. It’s these ordinary moments, and images, that I want to remember when my boys are grown, and it is what keeps me going when the inspiration isn't always there.
